Quinoa is a vegetable that is naturally resistant to certain fungi and molds due to its saponin content. Saponins have a bitter taste that is unpleasant for seed-eating birds. These properties allow quinoa not to need special treatment during its cultivation, which leads to healthier and more natural vegetables. Quinoa contains about 15% protein, with high biological value, rich in well-balanced essential amino acids – very rare in vegetables.
